Saujana Seafood Set



Was inspired to cook this set after a visit to Saujana in Johore after my Melaka trip. Unfortunately, for some reason, I can't find any seabass today and so decided to skip Ikan Tiga Rasa...had Sweet Sour Fish instead..anyway,..the kids loved it and so do I...only setback was, I can only eat a little coz I have this condition - I can't eat much when I'm tired!....*smile*



The fried rice is quite similar to the Nasi Goreng Ananas in my previous entry.....just omit the pineapples and use a combi of veg oil plus a little sesame oil for sauteing..



For this kailan, I added sliced fishcakes.

A handful of baby kailan
2 cloves of garlic - crushed
1 red chilli - sliced
1 small shallot (small onion)- sliced thinly
1/2 cup oyster sauce
1 tsp sugar
1/2 tsp salt or to taste, as the oyster sauce is already salty

Boil some water in a pot.Add some salt and 1 tsp of oil. Blanch veggie for a couple of minutes. Prepare a bowl of ice cold water in the meantime.Take out veggie and dunk into the bowl to stop the cooking process. U'll get a nice green colour without overcooking yr veg. Drain well.
Next,in a wok,heat 1 tbsp of oil,mixed with a few good dashes of sesame oil. The combi of oil will produce a glaze effect on the veg later. Saute onion,garlic,chilli and add the oyster sauce.Pour a little bit of water to mix.Add some sugar and salt.Simmer till boiling,then then turn off heat. If sauce is too dilute,u may add some cornflour solution (1 dsp cornflour + 1/4 cup of water )to thicken it.Arrange veg on a plate and pour sauce over...eat it hot!



Similar to the soup in my Tom Yam Noodle...just add in any 'protein' seafood u want..



Ingredients

1kg battered fish slices - fried, and put aside

The sauce :

1 cup chilli sauce
1/4 cup tomato sauce
1/4 cup sweet sour sauce
2 tbsp plum sauce
3 tbsp vinegar
3 tbsp sugar
salt to taste

2 onions - wedges
a few slices of ginger
2 cloves of garlic - finely minced
1/2 green capsicum - cubed
1/2 red capsicum - cubed
1/2 yellow capsicum - cubeb
1/4 cup of finely cubed pineapple

1 tbsp veg oil
1 tbsp sesame oil

Heat the oil combi and saute the onions,garlic,ginger and add all the capsicums and pineapple. Don't burn the aromatics. Add the sauce ingredients. If it's too thick, add some water till u get the consistency u want. Avoid making it too dilute. Taste and adjust accordingly. It shud taste spicy , sweet and sour all in one. Add whatever that is lacking. Pour over fried fish slices when u are abt to serve to prevent sogginess.

Nasi Ayam


Chicken Rice.

Millions of version. You choose one. I choose this cause I cooked this when my husband's family came over to my house for a 'getting-to-know' session 16 years ago...u know what I mean...I was single then and maybe they wanted to know if their future in-law knows how to cook!..well I think they were in for a real treat..

The Rice



Ingredients
6 cups of uncooked rice, washed and drained

3 cloves of garlic - minced finely
1 shallot - minced finely
2 inches of ginger - bruised
1 cinnamon bark
2 star anise
2 cardamoms
2 screwpine (pandan) leaves - tied in a knot
Enough Soup to cook rice with.

Heat abt 2 tbsp of oil plus a few dashes of sesame oil in a wok. Saute the cinnamon bark, star anise, cardamoms, garlic, shallots and ginger till fragrant. Take care not the burn the garlic. Add pandan leaves. Then add in the rice. Stir and coat rice with the aromatic oil. Remove from heat and pour into your rice cooker. Add sufficient Soup to cook your rice as according to yr pot measurement plus a cup of extra soup to make sure the rice has enough soup to absorb. Cook rice in the cooker as u normally would. When cooked, give it a stir, remove pandan leaves and the aromatic spices (that u can see...hehe)

Nasi Goreng Ananas


Pineapple Fried Rice

Delicious on its own or with your favourite savoury dishes.

Ingredients


5 cups of cooked rice
4 eggs - beaten till fluffy and made into scrambled eggs.Set aside.

Aromatics

5 cloves of garlic - minced
1 onion - minced
1/2 inch of ginger - minced
1 red chilli - chopped

1 cup of pineapple - nicely wedged
1/2 cup of mixed veggie(carrots/peas/corns)

1/2 cup of cubed chicken breast
1/4 cup of crabmeat
1/2 cup of seafood (sotong/baby shrimps_

3 tbsp light soya sauce
1 tbsp white pepper
salt to taste
sugar to taste

Heat enuff oil in wok and saute the aromatics till fragrant.Do not burn the garlic. Add pineapple and veggie. Stir. Add in the chicken,crabmeat and seafood. Next, the sauce,pepper,salt and sugar. Add in the rice and eggs.Fry well and serve hot with fried shallots.

Cantonese Porridge




I love to eat this for that back-to-basic feeling. That retro feeling.It's so understated, but oh so refreshing. U can have a great spread of imaginable condiments. Like I said, mine is very basic. Try some.

Ingredients

For Porridge

Make enough porridge out of rice, extra water than usual, and a little salt.

Condiments

1 packet of groundnuts, fried to a golden brown. Underfry them,as it'll brown while cooling.Set aside.

1 packet of dried anchovies(ikan bilis), fried to a nice crisp. Set aside.

salted duck eggs (if u like)

Scrambled Eggs :
Beat 5 eggs, 1 tsp salt, dash of pepper, 1 minced onion. Fry over 2 tbsp of oil until moist and crumbly. Remove and set aside.

Preserved Pickled Veg:
Heat 2 tbsp of oil in wok. Saute 2 diced onions, 3 minced garlic and 2 sliced red chillies. Saute till fragrant and onions begin to brown. Add in 1 packet of pickled veggie (cut, washed and drained) and fry till evenly mixed. No need to add salt as veg is already salty.Remove from heat.

Nasi Tomato




Tomato Rice..made these during 1 of the Ramadhans, without even tasting (fasting..)and it turned out great. Great with Ayam Masak Merah, Kambing Beriyani or other stuff that u feel fit enuff to be gobbled up as a set...

Lontong Goreng




Fried Lontong (rice cakes).It's usually eaten during breakfast but we malays will eat it anytime.. Alter the chilli for those who are not adventurous...hehe

Ingredients

Some cooked lontong/rice cakes(cubed)
1/2 kg minced beef,fried slowly over a dry wok till cooked
2 eggs
3tbsp chilli sauce
1tbsp oyster sauce
2tbsp dark soya sauce

*to be grounded*
15 or more dried chillies,soaked to soften
2 onions
6 cloves of garlic
1/4 cup of dried shrimps,soaked to soften
1 tbsp belacan / shrimp paste

*garnish*
some spring onions
a huge fistful of fried shallots
sliced cool cucumbers
sliced red/green chillies

Method

Heat enuff oil in yr wok. Saute the ground ingredients till fragrant.Add the 3 sauces and salt to taste. SprinkLe a tsp of sugar if desired. Throw in the cooked minced beef,coating well with the sauce. Add the cubed lontong,mix well. Beat in the egss, and stir. Texture of the dish should be a little moist but crumbly. Fry nicely and sprinkle in the fried shallots and spring onions.
Serve with the cucumber and chillies and dip into chilli sauce.
