Banana Demerera Muffins


Made these for breakfast today as I was feeling too lazy to scout for something and I also need to recycle my last remaining 4 bananas on the countertop.
The sprinkling of demerera sugar on top gives a crusty topping as u bite into, but, if u don't have it, ordinary white or brown sugar will do. Serve with yr favourite milk or hot beverage.

Dry Ingredients

3 cups of plain flour
2 cups castor sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp salt
combine the above in a big bowl.


Wet Ingredients

3 eggs
1 cup of veg. oil
4 mashed ripe bananas
1/2 tsp lemon juice/orange juice
2 tbsp vanilla extract
combine the above in a bowl.

some demerera/white/brown sugar for sprinkling

Make a well in the centre of the dry ingredients and pour in the wet. Mix thoroughly and scoop into muffin tins lined with paper cases. Fill 3/4 full. Sprinkle the top generously with demerera sugar. Bake in a preheated 180d oven for abt 20 - 25 mins.
Cool on wire rack.

Domestic Goddess Muffins



Chocolate Chip Muffins from the Domestic Goddess herself,..the one and only Nigella Lawson.

I find these pretty good. Especially with a glass of cold milk. For breakfast, or anytime.

The Dry Ingredients


250g flour
2 tsp baking powder
1 tsp bicarbonate of soda
2 tbsp good quality cocoa powder (I used Hershey's)
180g castor sugar

Mix the above in a bowl thoroughly with a balloon whisk.




The Wet Ingredients


250ml milk
90ml vegetable oil
1 large egg (beaten)
2 tsp vanilla

Mix the above in a measuring jug.

Pour the wet ingredients into the dry ingredients and mix well. Add 150g of chocolate chips. Spoon into muffin cases in a 12-bun muffin tray. Fill it 3/4 full to allow the muffins to rise nicely.Sprinkle more chocolate chips over them. Bake in a preheated 180 degrees oven for abt 20 mins or until a toothpick inserted into the muffin comes out clean. Remove from oven and cool completely on a wire rack.

Apple Bread Pudding


made these the other day..(forgotten when was that)..but dont have the time to post..well,..here it is,..as explained by the pics.. I managed to get abt 48 minis and it was all gobbled up within an hour..mmmmm..ENJOY!









Simple Vanilla Cupcakes



This is just a basic cupcake recipe. Love to get my kids to bake these. Of course u can frost/ice/buttercream for a more delectable finish.

Ingredients

125g butter
125g sugar
125g flour
2 eggs
1 tsp vanilla essence
2 tbsp milk

Combine the above in a food processor. (I told u it's THAT basic)Spoon into cupcake cases in a muffin pan about 1/2 to 3/4 full. Bake in a preheated 180 degrees oven for abt 15-20 mins, depending on yr oven. Cool completely on a wire rack. It might yeald u abt 12 cupcakes.

Drizzle with a dust of icing sugar and smother yourself with it.
